Looking for a Unique Korean Soup Dish? Try Gopchang Jeongol

Gopchang Jeongol (beef intestine hot pot) is a familiar yet surprisingly unique Korean soup dish.

The Difference Between Guk and Jjigae

Korea has a wide variety of soup-based dishes, such as guk, jjigae, tang, and jeongol.
Among them, guk and jjigae are usually distinguished by the ratio of broth to ingredients.

A guk contains more broth than solid ingredients,
while a jjigae has more ingredients than broth.

Based on this distinction, jeongol is closer to jjigae.

What makes jeongol unique is how it is prepared and eaten.
It is cooked in a wide and shallow pot, known as a jeongol pot, where ingredients and broth are simmered together right at the table.
This interactive way of cooking reflects the communal and lively nature of Korean dining culture.

What Is Gopchang (Beef small Intestine)?

Gopchang refers to the small intestine of cattle.
It is considered a distinctive ingredient in Korean cuisine and is most commonly enjoyed grilled.

Although it is a fatty cut, gopchang offers a chewy texture combined with a rich, nutty flavor.
For many people, this unique combination is what makes it so appealing.

While hot pots are often made with beef or pork, adding gopchang creates a completely different depth of flavor.
The fat and umami released from the gopchang enrich the broth in a way that standard meats cannot.

Gopchang Jeongol is typically made with a vegetable-based broth, enhanced with chili flakes or fresh chili peppers to create a spicy and hearty flavor.
Despite its richness, the broth remains surprisingly clean and well-balanced.

If grilled gopchang delivers a bold and straightforward taste,
gopchang jeongol offers a deeper and more complex flavor experience.

For this reason, it is a popular choice among office workers.
It is often enjoyed as a comforting hangover meal during lunch, or as a perfect pairing with soju in the evening.

However, ingredients made from Hanwoo (Korean native cattle) are generally expensive in Korea.
Gopchang from Hanwoo is no exception.

It is cooked and eaten on a portable burner.

It comes with five side dishes.

The gopchang jeongol in the photo costs about 25,000 KRW per person.
While it may seem pricey, it usually comes with several side dishes, making it a satisfying and complete meal when eaten with rice.

Because gopchang is an internal organ, proper cleaning and preparation are essential.
If the price is unusually low, it may indicate poor handling.
Improperly cleaned gopchang can have an unpleasant odor.

If you are tired of common Korean soup dishes like kimchi stew, soybean paste stew, or budae jjigae,
gopchang jeongol is definitely worth trying.

It offers the familiar warmth of Korean spicy soup,
but with a distinctly different and memorable character.
